The Ingredients for Your Vegetarian Laksa Recipe
• 3- 5 tablespoons of oil• 500g of coconut milk
• Straw Mushroom
• 5 pcs bencurd (tau foo pok)
• salt to taste
• 400g of fresh rice-flour noodles (laksa), blanched in boiling water, or dried rice vermicelli (beehoon), soaked to soften
• 1 bowl of beansprouts
• 2 sprigs laksa leaf, chopped roughly
• 5 hen's egg, hard-boiled and peeled
• 1/2 pcs (chopped into small pcs)of fried mock fish
For Spice Paste:
• 5 cm (2 inches) blue ginger
• 5 cm (2 inches) yellow ginger
• hand full red chillies
• 2 lemon grass, bruised.
How to Cook Vegetarian Laksa Soup
Prepare the spice paste. Chop the lemon grass, ginger and chillies coarsely and blend or process, add a little of the oil until fine.
Heat veg oil in a wok or a heavy pan.
Add the spice paste and cook over low heat, stirring constantly, for about 5 to 10 minutes until the paste is fragrant. After that, add coconut milk and water(About 3 l) and bring to the boil, stirring.
Put in all the (tau Pok cut in small pcs) simmer until it is cooked.Then, season to taste.
Lastly, to serve, divide the noodles and beansprouts among bowls. Top with the Laksa gravy, eggs and sprinkle with laksa leaf and fried mock fish.
You Can also add vegetarian fish cake and others as you like.
