Healthy Vegetarian Fried Bee Hoon (vermicelli)

Vegetarian Fried Vermicelli (Fried Bee Hoon)

A very simple but yet not many people or even hawker stall and restaurant can cook tasty good standard vegetarian fried bee hoon.

My recipies is from my years of cooking this dish to my perfection and tested on Coffee Shop Vegetarian Stall(Record sale of 15 packets(3kg per/pkt) in half a day)

Vegetarian fried bee hoon is a very popular dish in Singapore.

Ingredients
400 g dried rice vermicelli (beehoon) Recommended - Chilli Brand Tai Sun or NTUC Brand.
3/4 Stalks chye sim cut to size 2 inc
150 g shredded carrots, 600 ml hot boiling water
1/2 Beijing Cabbage cut to shred


Ingredients 1



1 tablespoon of veggie oil



2 1/2 tablespoons light soy sauce
1/2 teaspoon of sugar
1 teaspoons salt
1/2 teaspoon of dark



2 tablesspoon of mushroom oyster sauce
some white pepper

Directions



1. Soften vermicelli in cold water for 15/20 minutes.
2. Heat oil in wok and add (ingredients 1) stir fry till smell fragrant and ahh 600 ml hot water. Then add cabbage, chye sim and carrots till boil. Drain off bee hoon, add to boiling soup. Stir evenly then braise over low heat.
3. Add vermicelli. Cook until water is absorbed. Season with sesame oil and pepper. Stir continuously so that vermicelli will not stick to wok.
4. Use a large pair of chopsticks to toss the vermicelli, so that bee hoon and ingredients is evenly mixed and to avoid the risk of breaking it up and making it mush.



Served with vegetarian Cha Siew, vegetarian roasted goose and chilli.



Method to prepare :



Buy vegetarian cha siew fried with sugar and sesame oil to taste.



Vegetarian roasted goose dip fry with oil.

How to Make Vegetarian Siew Mai my Way !

Vegetarian Siew Mai
Ingredients 1 ° 500g wonton skin
Ingredients 2 ° 1 turnip medium size,2 taukua(tofu), 500g vegetarian Ham all cut to small pcs ° 300g carrot, peeled and finely shredded/grated, Coriander leaves small pcs ° 3 dried Chinese mushrooms, soaked and finely sliced, 3 stock chye sim cut to small pcs. ° 1½ teaspoons vegetable oil ° ½ teaspoon sugar ° ¼ teaspoon salt, or to taste ° 1 teaspoon light soy sauce, vegeies oyster sauce to taste ° pepper/salt, to taste ° few drops sesame oil ° 1 tablespoon corn flour,2 tablespoon tapioca flour mixed Mixed All Ingredients 2
Method
To wrap siew mai 1. Place a piece of wonton skin in a small container (disposable plastic chilli container for takeaway). Fill with 1 to 1½ teaspoons of filling, giving it a little press . To steam siew mai 1.Steam for 15/20 minutes and remove from the streamer. 2. Serve warm.or cold with chillies or ginger sliced with black vinegar.

Vegetarian Bak Kut Teh - Secret Recipies Reviewed

Ingredients Vegetarian Bak Kut Teh
· INGREDIENTS for Bak Kut Teh : 1
· 2-inch ginseng root, peeled, slightly crushed人生(optional)
· 2 cinnamon sticks桂皮
· 2 star anise八角
· 4 pcs of Old Dry Orange Skin老橙皮
· 4 pcs of Kum Chao甘草片
· 4 pcs Chun Kong川弓
· ½ packet Yu Zhu玉竹
· 2 pcs small bamboo(2ft length cut to small size for boiling)甘摭
· 4 slice of tang kui当归片
· 1 packet of Bah Kut The Spices(ILC Trading $1.50pkt orange packing)

· INGREDIENTS for Bak Kut Teh : 2
· 500g or 1 package(green/yellow packing) Vegetarian Toon-Mutton Meat
· 500g vegetarian fishball(the one with chilli and veggies)
· 6 dried shitake mushrooms(sock in cold water before used)
· 1-2 canned mushroom(hosen)
· 1 lump rock sugar to taste
· 1 tbsp light soy sauce to taste
· salt and pepper to taste
· vegetarian mushroom oyster to taste

Directions
1. In a stackpot add Ingredients 1 with cold water, boil All Herbs for 2 hours.
2. Removed all herbs and bamboo excepts (packet of Bah Kut The Spices)
3. Add in Ingredients 2 to Boil and
4. Add Rock Sugar light sauce; mushroom oyster sauce to taste; and season with salt and pepper
5. Serve with noodle or white rice.

INGREDIENTS for Bak Kut Teh : 1
