Healthy Vegetarian Fried Bee Hoon (vermicelli)

Vegetarian Fried Vermicelli (Fried Bee Hoon)

A very simple but yet not many people or even hawker stall and restaurant can cook tasty good standard vegetarian fried bee hoon.

My recipies is from my years of cooking this dish to my perfection and tested on Coffee Shop Vegetarian Stall(Record sale of 15 packets(3kg per/pkt) in half a day)

Vegetarian fried bee hoon is a very popular dish in Singapore.

Ingredients
400 g dried rice vermicelli (beehoon) Recommended - Chilli Brand Tai Sun or NTUC Brand.
3/4 Stalks chye sim cut to size 2 inc
150 g shredded carrots, 600 ml hot boiling water
1/2 Beijing Cabbage cut to shred


Ingredients 1



1 tablespoon of veggie oil



2 1/2 tablespoons light soy sauce
1/2 teaspoon of sugar
1 teaspoons salt
1/2 teaspoon of dark



2 tablesspoon of mushroom oyster sauce
some white pepper

Directions



1. Soften vermicelli in cold water for 15/20 minutes.
2. Heat oil in wok and add (ingredients 1) stir fry till smell fragrant and ahh 600 ml hot water. Then add cabbage, chye sim and carrots till boil. Drain off bee hoon, add to boiling soup. Stir evenly then braise over low heat.
3. Add vermicelli. Cook until water is absorbed. Season with sesame oil and pepper. Stir continuously so that vermicelli will not stick to wok.
4. Use a large pair of chopsticks to toss the vermicelli, so that bee hoon and ingredients is evenly mixed and to avoid the risk of breaking it up and making it mush.



Served with vegetarian Cha Siew, vegetarian roasted goose and chilli.



Method to prepare :



Buy vegetarian cha siew fried with sugar and sesame oil to taste.



Vegetarian roasted goose dip fry with oil.
